This white wine from Cantina Belisario is made from 100% Verdicchio grapes. The vineyards are located on the western side of the Upper Esino Valley, between Matelica and Esanatoglia, on hilly terrain with clayey-calcareous soils. After harvesting, the grapes are sanitised in a cold room by washing them with ozone and cooling them to 0°C. After 36 hours in the cold room, they undergo a brief cryomaceration in the press for one hour, followed by cold decanting of the must. Natural yeast is then added and the wine is left to mature in steel for 9 months.
Characteristics of this wine from Cantina Belisario
