This white wine from the Belisario winery in the Marche region comes from the vineyards of the upper Vallesina valley, located in the municipalities of Matelica, Cerreto d'Esi and Castelraimondo between Ancona and Macerata. The vineyards are located in a hilly area, on clayey-calcareous soils. The grapes used are carefully selected Verdicchio grapes: vinification takes place in a temperature-controlled white wine cellar using carbon dioxide snow and soft pressing. Fermentation takes place at a temperature of 14-15°C for about twenty days, while the final stage of maturation takes place in steel for 4 months.
