Produced with 100% Pecorino grapes, this Abruzzi wine from Tenuta Ulisse bears the name of the cheese of the same name probably because the shepherds brought the flocks to pasture right among the vineyards themselves. After the manual harvest, the grapes are carefully selected and placed in the cooling tunnel: this drop in temperature involves the cryomaceration of the skin and the extraction of the aromatic components. Then destemming and pressing and a slow fermentation at 11ºC. The aging begins in the steel tanks and then continues in the bottle.
Characteristics of Terre di Chieti Pecorino
The organoleptic test of this white wine from Abruzzo shows a fairly intense straw-yellow color with greenish reflections. The nose is very intense with pleasing notes of white and exotic fruit. In the mouth it denotes a good acidity and minerality, given by citrus notes of grapefruit and papaya.
