The Cerasuolo d'Abruzzo DOP of Tenuta Ulisse is made with 100% Montepulciano grapes grown in the vineyards located near Crecchio, province of Chieti. After the manual harvest, a very particular vinification is carried out: the whole grapes are carefully selected and placed in the cooling tunnel with a consequent sudden reduction in temperature; In this way the skins are cryomacerazione and aromatic compounds are extracted. Then destemming and cold maceration for 12 hours and a slow fermentation in steel at a temperature of 11ºC. It ends with aging in the bottle.
Features of this Cerasuolo d'Abruzzo
On the organoleptic test, this Abruzzese wine has a brilliant rosy cerasuolo color. The nose predominates aromas of fresh red fruit such as strawberry and cherry, as well as floral notes. In the mouth the taste is fresh, with a good acidity and a long aromatic persistence.

This Cerasuolo d'Abruzzo of Tenuta Ulisse is excellent with grilled fish, fish soups, roast white meat, pizza and semi-aged cheese.. The optimal serving temperature is 8/10ºC in a not very large glass.
