Franciacorta Rosè DOCG is a sparkling wine, Champenoise method of the winery Contadi Castaldi. Winery which has selected between this magnificent area of Franciacorta, the most famous vineyards and the winemakers richer in expertise and traditional experience. To create this sparkling wine have been used grapes: Chardonnay 80%, Pinot Nero 10% and Pinot Bianco 10% The wine is made by a soft pressing and after the decanting phase are added yeasts. The fermentation in stainless steel has a duration of 20 days. The long aging of 7 months takes place partly in steel and partly in barriques. In the following month of May it will be bottled and sealed with crown caps for the fermentation and left to age in the bottle on the lees for 24-36 months. The last phase of the process involves the degorgement of wine that involves removing the cap on which are deposited sediments. The bottle is then closed with the traditional cork stopper with metal wire cage and left to age for other 3-4 months.
Characteristics of Franciacorta Rosé DOCG
The wine has bright coral pink color, with fine and persistent final. To the nose is fresh, with notes of berries, rose petals and hints of apple and tropical fruit. To the palate is structured, full-bodied, crisp, with balanced a long finish.
Recommended pairings while tasting this Rosè DOCG
Serve in a flute at a temperature of 6-8°C. Excellent as an aperitif and perfect companion to appetizers, entrees of fish, fish tartare, salami and fresh cheeses.
