The Terre di Chieti Passerina of Tenuta Ulisse is produced with 100% Passerina grapes, cultivated in the vineyards located near Chieti, more precisely in Crecchio. The name of this wine comes from the fact the berries, being pretty small, are often the preferred food of the sparrows. In the past Passerina was used only in blends, Tenuta Ulisse decided instead to vinifie it alone to enhance its minerality. After the harvest, the carefully selected bunches are placed in the cooling tunnel with the consequent reduction of temperature and cryomaceration of the peel: through this procedure, the aromatic components are extracted. Destemming, pressing and a slow fermentation at a controlled temperature of 11ºC. The aging begins in steel tanks and then continues in the bottle.
Characteristics of Terre di Chieti Passerina
The organoleptic examination of this wine from Abruzzo shows a pale straw yellow color with greenish reflections. The nose has pleasant fruity notes of peach, apricot and grapefruit as well as floral notes of wisteria and lime.

Perfect with all fish dishes, from appetizers to main. Excellent with fresh cheese or pasta filata. The optimal serving temperature is 10ºC in a fairly large glass.
