The Millesimato Brut "Jhamel" Champenoise is a sparkling wine of classic method produced by the Agricultural company Salvano located in Piedmont in the Langhe territory. The grapes are Chardonnay 80% and Pinot Nero 20%. The wine making it is on selected yeast under controlled temperature, follows the bottle of the wine which is close by a crown tap for the RI fermentation and it is left in bottle on yeast for about 30 months. The last part of the method consists in the disgorging which is the removal of the cap where the lees lay down and then the traditional cork with a little metal cage.
