Wine description
From the vinification in blend of refined and valuable Chardonnay grapes for 60% and Pinot Noir for 40%. The origin is that of the valuable vines located in the territory of San Floriano del Collio in the province of Gorizia, within the company. The harvest was held in the second decade of August. The vinification foresees that the grapes are already selected in the vineyard and then harvested in a box, at the first light of the day, before the sun warms the pulp. The very soft pressing allows to extract only the flower of the must; this remains in natural settling for one night, in complete absence of oxygen. The alcoholic fermentation takes place partly in steel and partly in oak barrels at a temperature not exceeding 14 º C and the aging on the lees continues until the following spring. It follows the draught, then the aging in bottle on the lees for over four years.
Characteristics of this Sparkling wine
The aspect of this wine is slightly intense yellow, lively and brilliant, with a thick, minute and continuous perlage. The aroma is broad and clear, clean and complex, reminiscent of varied mixtures of ripe fruit and toasted hazelnut. The taste on the palate is offered with all its fullness, for the rich acid vein that supports it; perfect balance between yeast fragrance, aromatic freshness and long persistence.

A great wine aperitif, marries fish in the most varied interpretations. The optimal serving temperature is 6ºC.
