The new year of the Donnafugata Brut confirms its refinement and elegance and at the same time surprises for its freshness and mineral taste. It is produced with the classic method remarked by a fine and very persistent perlage. This sensational sparkling Brut wine is made by Chardonnay and Pinot Nero grapes all cultivated in the company. The soils are located in the south-west of Sicily in the Contessa Entellina estate at 470-500 meters above the sea level. They are exposed at North-east on a franc- clay soils of a sub-alkaline reaction. The limestone is around 20-35% and the soils are rich of potassium, magnesium, calcium, iron and zinc. The fermentation takes place in steel tanks at 15°-16°C and the re-fermentation takes place in bottle. The aging lasts 30 months with the first disgorging in July.

The Brut Donnafugata has a bright straw yellow color typical for an elegant brut. The smell has crust bread, citrons and white flowers aromas. The taste is fresh and mineral. It has a long-limbed fine and persistent perlage.

The Brut Donnafugata is perfect as appetizer, with raw fish in particular crustacean and with vegetarian or fish frying. It is suggested with fish eggs and basil. It has to be served in a medium wide wine glass at 6°-8°C.
