This fabulous Chianti produced by Dievole winery praises the denomination DOCG. It is a blend composed by 95% Sangiovese, 3% Canaiolo and 2% Colorino. The lands composed mainly by marls, limestone and stones. The vineyards have a south, south-west exposition and are trained with spur pruned cordon. 5500 stumps per hectare, that are around 10-15 years old, give 60 quintals grapes. Chianti Classico Riserva DOCG “Novecento” represents 900 years of the winery, founded in 1090. The first harvest of this wine happened in fact 900 years later, in 1990. It is produced with spontaneous fermentation, started by local lees in containers made of concrete. The malolactic fermentation is followed by the aging, that is managed in non-toasted, big barrels made of French oak for 17 months. Other four months maturation in the bottle end the process. This wine has a unique structure that made it be recognized between the others.
