Wine list | Cabernet Sauvignon |
This wine comes from the renowned Castello di Spessa winery in Friuli Venezia Giulia: it is a prized red wine which vinification involves the use of Cabernet Sauvignon grapes, carefully reared and coming from the most suitable areas of Friuli in the Isonzo area. The harvest requires that the grapes, rigorously harvested by hand in the first ten days of October, are de-stemmed. Fermentation on the skins follows which takes place at a controlled temperature of 28°/30°C. At the end of fermentation after about 15/20 days, the wine is separated from the marc, assembled in a stainless steel tank where the malolactic fermentation takes place. At the end of the malolactic fermentation it is decanted and aged in oak barrels for about 18 months.
