Valpolicella Classico Ripasso DOC is a red wine produced by Cantina Vaona. It’s considered by many the “little brother” of the more renewed Amarone. Grapes used to produce it are 40% Corvina, 30% Corvinone, 25% Rondinella, 5% Molinara; comes from ancient vineyards owned by Cantina Vaona. Winemaking consists of a fermentation of 15 days in stainless steel vessels, then wine is moved in other stainless steel vessels for 1 year. Oak barrels lasts 4-5 months.
Characteristics of this Ripasso wine
It displays a deep ruby almost garnet red, with a subtle orange vein, due to the long ageing. Bouquet is surprisingly wide and fragrant, merging ginger flavour, pepper, plum and black cherry notes. It’s complex, balanced and slightly tannic in taste.
