Opera Unica is made from 100% Chardonnay grapes grown in the vineyards of south-western Sicily, at the Tenuta di Contessa Entellina: its name derives from the fact that production is limited to only 6574 bottles, which are born in unusual climatic conditions. This wine was in fact born from a vintage that was particularly rainy compared to the average: following the manual harvest of the first days of September the fermentation took place at 18-20 ºC for 12-14 days, with subsequent aging of 9 months in steel and over 4 years in bottle.
Characteristics of this Chardonnay Donnafugata
It has a yellow color with golden and coppery reflections. The olfactory bouquet ranges from fruity notes of yellow pulp fruit to those of saffron, beeswax and ginger. The palate is dry, with a well-balanced acidity and a savory finish.
Recommended pairings with this Sicilian white wine
Particularly suitable with fish dishes, especially sushi, Asian dishes or dishes based on white meat. Serve at 12-14 ºC.
