Wine description
The vinification of 100% Merlot grapes. The origin is that of San Floriano del Collio, in the most valuable territories with selected vines only on the highest hills and best exposed. The harvest takes place in the first fortnight of October. The vinification provides that the grapes are harvested in trays and stored in fruit, where, at controlled temperature and humidity, they are concentrated to enhance their aromas and body. The maceration on the skins, about 20 days, is carried out in automated and controlled thermo winemakers. From the following spring Merlot ages in Allier and Tronçais barriques for two years and another 24 months of bottle are necessary for aging.
Characteristics of this red wine
The aspect evidenced by the organoleptic examination, this wine has a deep ruby red color with a still violaceous nail. The aroma is broad and complex, concentrated and intense. Clear olfactory sensation of berries, spices and licorice. The taste in the mouth is distinguished by the richly fruity texture blends with the warmth and softness of this great wine, closing on sweet and velvety tannins that amplify its length.
Serving suggestions tasting Merlot Doc
Excellent in combination with red meat, game, goat cheese and aged vaccine are its ideal combinations. The optimal serving temperature is 16ºC in a wide glass that allows the wine to oxygenate.
