From the vinification of Ribolla Gialla, a wine symbol of the winery Collavini. The origin is the IGT of Venezie, The harvest takes place strictly by hand at the end of September. The vinification starting from the grape, rather late, is harvested at the end of September and left to macerate for 6 hours at 13º C. The fermentation, at a temperature not exceeding 15 º C, lasts about 15 days and, as the following aging until the following spring, takes place in steel.
