From the vinification of 100% Chardonnay grapes that this vintage Franciacorta DOCG of great value and refinement is born. The origin is traced back to a particular vineyard located in the municipality of Cologne on the slopes of Mount Orfano. For the harvest we proceed with the entry into the vineyard with manual collection in boxes of maximum 18Kg. Follows the classic vinification for the Franciacorta Brut Millesimato Blanc de Blanc that comes from clonal selections of Chardonnay grapes. Harvesting by hand in small crates, very slow and soft pressing of the whole bunches. Fermentation controlled in purity to 17-19°C with indigenous yeasts in order to keep intact the flavor and aromas of Franciacorta. Maturation in stainless steel tanks. In the months of March and April is carried out in the bottle for the fermentation. The bottles are piled up in aging rooms at controlled temperatures (12/14°C) for at least 36 months. After this period the Franciacorta Brut Millesimato Blanc de Blancs takes on its characteristics of perfume and taste and a very fine perlage. Then we move on to the final phase of remuage, dégorgement and clothing for the expedition.

The appearance has a yellow color of good charge with greenish reflections. Perlage very fine and persistent. The scent has a rich fine and complex aroma. The taste has a broad dry, dry taste with acidulous vein and characteristic nerve, elegant and full to the taste.

An excellent wine as an aperitif, finds a great match with a classic salmon tartare. The optimal serving temperature is 6ºC in a high and tapered glass.
