Wine description
The Pignolo "Eldoro" DOC of Azienda Agricola Livon, was born in the vineyards of the Collio DOC, more precisely in Dolegnano, a hamlet of San Giovanni al Natisone in the province of Udine. The vine used is Pignolo, an autochthonous Friulian vine cultivated on clay soils. After harvesting by hand in boxes, the soft destemming takes place and the consequent fermentation on the skins. It ages for 15 months in wood at a constant temperature of 18 C. It is then assembled and bottled for a long aging in the bottle.
Characteristics of the Pignolo Eldoro
The wine has a ruby red colour. The nose is fruity with hints of red fruit and spices.
Recommended pairings with this red wine
Excellent with dishes of roast meat such as pork, game and lamb. Serve at a temperature of 18' in a large glass. Serving.
