The famous Grignolino DOC of Cantina Marchesi di Barolo del Piemonte is a traditional Piedmontese wine that is produced in the heart of the Piedmontese Langhe. The vinification uses only 100% pure Grignolino grapes. The grapes, freshly harvested, arrive in the cellar intact and is quickly crushed and gently destemmed to extract from the skin and from the outer area of the berry only the most noble and aromatic fractions. The temperature-controlled fermentation takes place in thermo-conditioned tanks. Maceration of some days with racking of the still sweet product that ends the fermentation without contact with the pomace, enhancing the fruity
Characteristics of this wine from Piedmont
The appearance has a pale ruby red color with a tendency to an orange hue. The aroma is broad and fresh, very delicate, with typical hints of white pepper, gentian and delicate spices. The taste is dry, pleasantly acidic, lively, slightly tannic, with a characteristic almond aftertaste.

For its characteristics of particular freshness, it goes well with many dishes: risotto, ravioli, legume soups, white meat. Ideal also with some very tasty fish dishes, such as sardines and fried anchovies. It is the traditional companion of cooked salami, a typical Piedmontese sausage, rather tasty and flavored. The optimum serving temperature is 14 - 16 C.
