Liante is the only DOC of Castello Monaci. Its name is linked to the Levant wind, cold in winter and hot in summer that blows strongly and steadily on our vineyards, also acting as a natural anti-mold. It is a wine softened by the presence of Black Malvasia di Lecce, which gives a velvety and creamy taste, the perfect match to the freshness of Negroamaro. The vines used in blends for its vinification are those of Negroamaro and Malvasia Nera. The origin falls within the DOC area of Salento, in Puglia. The vinification involves the use of grapes, Negroamaro and black Malvasia of Lecce, which are vinified separately in order to capture the best characteristics; after blending, part of the wine matures in barrique, the rest refines in steel.
