Wine list | Dolcetto d'Alba |
People say that in “Langhe”, a famous zone for the production of wine in Piedmont, each hill and each vineyard produces its own Dolcetto, characterized by particular features that can be easily recognized. This difference is due to the composition of the soils. The minerality of these lands give to their wine structure, richness and character. This wine is produced with 100% Dolcetto in the area of Castiglione Falletto and La Morra. The vineyards, planted 300 meters above the sea level, have a west, south-west exposition and are located on lands mainly composed by sands and clay. The plants of the vineyard, that are between 25-30 years old, are trained on espaliers with the traditional Guyot method. 4500 units per hectare that produce around 70 quintals grapes. The wine making starts with the soft pressing and the elimination of stalks, followed by a long maceration that last one week. The fermentation is managed in steel containers at a controlled temperature of 25°C. The maturation is managed in steel too and it is followed a further aging of three months in the bottle.
