The Dolcetto d'Alba "Dosso" of Cantina Enrico Serafino was born in the vineyards located in Monforte and Alba, in the province of Cuneo and is produced with 100% Dolcetto grapes. After manual harvesting, the bunches are carefully selected and cooled with carbonic snow to prevent oxidation. The grapes are then involved in the process of soft pressing without the use of augers, so as to preserve the peculiarities of the bunches. The must is then cooled before undergoing fermentation in steel tanks, followed by 10-day maceration with délestage. Finally, it is aged for 3 months in bottle before being marketed.
