The Langhe Nebbiolo "Picotener" of Cantina Enrico Serafino was born in the vineyards located in Canale, Cuneo, 100% Dolcetto grapes. After manual harvesting, the bunches are selected and cooled with carbonic snow to prevent oxidation. Then the destemming takes place, following which part of the grapes undergoes fermentation to whole berries while the remaining part is subjected to soft crushing. It then passes to fermentation in stainless steel tanks and maceration with délestage and submerged cap technique for 18 days. The aging takes place in oak barrels for 12 months.
