The Roero "Oesio" was born in the vineyards of the Roero area. The bunches are selected by hand on the vibrating table and cooled with carbon snow to avoid oxidation and considerably reduce the use of sulphites. Fermentation in truncated conical vats in wood for 25 days. The process of aging in wood lasts 18 months in medium-sized oak barrels (2500-4000 liters) and in small part in barriques.
Roero "OESIO" DOCG's features
It has a ruby red color with light orange reflections. The nose is intense, elegant, with hints of red fruits and floral aromas. Very recognizable the intensity of Nebbiolo with hints of spices. The nose is fine, elegant, very balanced with pleasant tannins and a long finish.
Suggested pairings tasting this product of Enrico Serafino winery
It goes well with pasta dishes, risotto with porcini mushrooms, aged cheeses, truffles and, at the end of the meal, with dark chocolate chips. Serve at a temperature of 16-18°C in a glass not very wide.
