The Barbera d'Alba "Pajena" DOC of the Enrico Serafino Winery, is produced with 100% Barbera grapes harvested by hand in the vineyards, located in the province of Cuneo, more precisely between Canale, Priocca, Govone and Santa Vittoria. After manual harvesting, the bunches are carefully selected and cooled with carbonic snow to prevent oxidation. Then the soft pressing takes place without the use of augers to preserve the characteristics of the bunch; the must is then cooled and then fermented in stainless steel tanks at a controlled temperature. Then there is the maceration with délestage for over 18 days and the aging in oak barrels for 14 months.

On the organoleptic examination, this Piedmontese wine shows an intense ruby red color with typical violet reflections. The nose has notes of violet, currant and cherry, in the mouth it is fresh and with a pleasant acidity softened by the aging in oak wood.

It goes perfectly with pasta, risotto, roasts, cheeses and cold cuts. This wine should be served at a temperature of 16-18°C in a glass not very wide.
