From the vinification of 100% pure Nebbiolo grapes raised within the company and which fall in the heart of the DOCG of Barolo, the most renowned in Italy and in the world. The origin is that of the territory of Coste di Rose which is a prestigious hill exposed in the east in the municipality of Barolo, right in front of Bussia di Monforte. For the vinification, the grapes, just harvested, arrives in the cellar intact and is quickly crushed and gently destemmed to extract from the skin and from the outer area of the berry only the most noble and aromatic fractions. The fermentation, at controlled temperature, takes place in thermo conditioned tanks. Maceration lasts 10 days, during which periodic pumping over is carried out in order to allow the must to appropriate all the trace elements present in the skins and to gently extract the coloring material. Racking only happens when all the sugar has turned into alcohol. Racked in vitrified concrete vats, specially made with a cork insulation, the wine maintains a long post-fermentation temperature of about 22 ºC. In this way malolactic fermentation starts and ends spontaneously in the following two months. For the aging of the wine, initially this is aged for two years, in part in Slavonian oak barrels of 30 and 36 hectoliters and, in part, in small French oak barrels of 225 liters, slightly toasted. The vineyard finds its unity with the assembly in traditional large oak barrels and completes its aging in the bottle before being put on the market. The Barolo Coste di Rose reaches maturity after 4 years from the harvest and the ripening plateau is between 4 and 20 years.
Characteristics of Barolo DOCG
On the organoleptic examination it has a ruby red color tending to garnet. The intense aroma with a clear scent of rose, licorice, spices and aromatic herbs, in particular wild mint. The taste is full, elegant, full-bodied. Even the delicate color and structure confirm a Barolo of immediate pleasantness, balance and harmony.

A prestigious wine, the ideal companion of the typical appetizers of the Langhe: raw meat, vegetable flans, truffle eggs. Excellent with tajarin, roasts, sheep and goat tome and hard cheese. The optimal serving temperature is 16 ºC.
