"Inu" is a Cannonau di Sardegna Doc BIO made from Cannonau grapes and small percentages of other indigenous red grape varieties; the vines of the Contini family, dedicated to wine for 4 generations, amount to well 100 hectares and are divided between the Peninsula of Sinis, Valle del Tirso and Pendici del Monte Arci. It is right near the latter that grapes are grown for the production of this wine, on soils of volcanic origin and favored by a Mediterranean climate with hot and ventilated summers and mild winters. After the manual harvest that takes place in the third decade of September, the crushing takes place with subsequent fermentation with maceration of the skins for 10-15 days and a soft pressing. The aging lasts for 12 months in barriques and tonneaux, then for 6 months in bottle.
Features of this Cannonau di Sardegna Doc
The organoleptic examination shows an intense ruby color tending to garnet if left to age. The nose is rich and fruity with hints of ripe cherry, plum and blackberry. In the mouth it is a warm and full-bodied wine, with an excellent structure and a long persistence.
Serving suggestions tasting this red wine
It is an excellent wine to accompany main courses of meat and game. Try it with Sardinian pecorino with myrtle. The optimal serving temperature is 16ºC in a glass not very wide.
