This wine is made by Cabernet Sauvignon grapes at 20%, Cabernet Franc grapes at 52% and Merlot grapes at 28%. The soil cultivation is moraine characteristic of the Franciacorta from Lombardy. The manual picking has a profit of 10000 kg per hectare which is around 6800 liters of wine. The grapes are separately picked, destemmed and pressed. The must ferments in steel at 28°C for 10 days with several punching down and delestage to extract of the colors and the aromas from the peels. After the racking off the must is put in wood barrels and part in steel where it ends the alcoholic and malolactic fermentations. Then the wine is assembled and it refines for 18 months before being bottled with the cold stabilization method.
