The Cordero di Montezemolo winery produces with the utmost respect for the local tradition this sensational Barolo wine that contains all the essence of an aristocratic and prestigious house. The vinification involves the use of only 100% Nebbiolo grapes as required by the strict production disciplinary. The origin of the grapes falls in the municipal territory of La Morra. Stands at the foot of the centenary Cedar of Lebanon. 1 Ha, the highest part of the hill Gattera, south/west side. The harvest takes place in mid-October. Then the vinification is followed by 8-day maceration in stainless steel tanks as well as the completion of fermentation for the next 12 days, after which the wine, transferred into small French oak barrels, undergoes malolactic fermentation. Finally, the wine matures slowly for at least 21 months in small French oak barrels.
