The Borgogno winery produces this red wine from the vinification of 100% Nebbiolo grapes this interpreting the utmost respect for the local tradition. The origin of the grapes lies in the administrative territory of Barolo, in the small Liste. The harvest takes place in the first two weeks of October. The vinification requires a first phase with spontaneous fermentation without added yeasts of about 12 days with temperatures starting from 22°C up to 29°C, with subsequent submerged cap maceration of about 40-60 days at a temperature of 29°C. The second phase requires, after racking, the triggering of the malolactic fermentation which lasted 15 days with a constant temperature of 22°C. After that the wine is transferred to Slavonian oak barrels to refine for 4 years, ending with 6 months of refinement in the bottle.

Upon organoleptic examination it appears garnet red in color. The scent is rich in floral, spicy and toasted scents. The taste on the palate is dry, full, full-bodied and persistent, austere and velvety.
