The prestigious Borgogno winery produces this sensational Barolo DOCG wine through the 100% vinification of Nebbiolo grapes. The origin lies in the administrative territory of Barolo, near Cannubi. The harvest takes place in the first ten days of October. The vinification, immediately after the harvest, involves natural fermentation without added yeasts in concrete tanks for about 12 days with temperatures starting from 22 ° C up to 29 ° C with subsequent submerged cap maceration for about 40 - 50 days at a temperature of 29 ° C. Consequently, after racking the malolactic fermentation begins and lasts for 15 days with a constant temperature of 22 ° C. After that the wine goes into 4,500 L Slavonian oak and French oak barrels, to refine for 4 years, to finish with 6 months of refinement in the bottle.
