From the vinification of 100% 100% Cortese grapes. The vinification requires that the grapes are kept intact to enhance the characteristics of the wine, all the operations of grape processing are carried out within the production area: the grapes are quickly taken to the cellar and gently pressed to extract from the skin and from the outer area of the berry only the most noble and aromatic fractions. The must obtained is fermented, at low temperature, in thermo-conditioned steel tanks. The wine is then poured into steel or vitrified cement tanks to preserve the typical fresh and fragrant aromas. The prolonged stay on the lees makes this wine long-lived, capable of evolving after uncorking and still in the glass.
Characteristics of Gavi Docg
The wine has a pale straw-yellow colour with greenish reflections. The aroma is intense and fine, fruity and floral, persistent. It reminds the Golden apple and the green almonds. Net is the scent of chamomile flowers. The taste is harmonious and of remarkable sapidity.
Recommended pairings while tasting this white wine
A classic wine from delicious appetizers, seafood and fish. Thanks to its structure and minerality, it is the ideal companion for rice salads, vegetable cakes, light first courses and seafood dishes. It goes very well with fresh soft cheeses. The optimal serving temperature is 6 ºC in a high and wide glass.
