Wine description

This sparkling wine, also the result of the great innovative capacity of Astoria technicians, is the result of the vinification in a blend of white grapes typical of Treviso. The origin of the vineyards falls on the hills of Treviso managed by the Astoria estate. The harvest takes place manually in September with the grapes at maximum chemical/organoleptic balance. This is followed by the vinification, which involves the soft pressing and the static decantation of the must. Its primary fermentation takes place in 18/19 C stainless steel containers with selected autochthonous yeasts. The new wine is kept on the "noble lees" for a month, then made limpid and poured in autoclaves for the foam. The refermentation takes place at 16/18 C always with selected yeasts and lasts about 25/30 days; followed by a period aging on the lees for a few days. Then proceed to bottling and rest in the bottle for a few weeks.

 

Spumante Brut "Yu Sushi Sparkling"'s features

The wine shows a pale straw yellow color, minute and persistent perlage. The scent is persistent and elegant, clean, fruity for typical aroma. The taste is characteristic, pleasantly dry in good harmony, acidic.
