This Salento red wine from Cantina Due Palme is made from a blend of 85% Negroamaro and 15% Malvasia Nera grapes: the grapes are grown on particularly clayey soils of a certain depth. After the grapes are harvested in mid-September, fermentation takes place in steel tanks at a controlled temperature of 23-25°C for about 10 days. The final ageing also takes place in steel tanks, followed by a further period of rest in the bottle.
Characteristics of this Salento wine
It has a very intense ruby red colour; the bouquet evokes aromatic herbs, spices and hints of Mediterranean scrub. On the palate, it is well balanced and has an excellent structure: the tannins are dense but pleasant, with excellent persistence.
