This sensational wine of Lombardy belongs to the tradition of Oltrepò Pavese. It praises the denomination IGT Provincia di Pavia: the classical production zone of Oltrepò Pavese. It is a blend composed by Pinot Noir, Barbera and Syrah. The vineyards produce around 60 quintals per hectare. The harvest is planned at the end of September. The soft pressing process considers the elimination of stalks. It is followed immediately by fermentation and maceration, managed in automated steel containers at 26°C for 12-14 days. A complete malolactic fermentation is developed in barriques, where the wine ages, then, for 6 months. A further maturation of 6 months in the bottle completes the wine making process.
Features of the red wine “Oltraja”
Ruby red colour enriched by an intense and complex perfume with hints of mature red fruits and spices. The taste is balanced, smooth, structured, persistent and characterized by soft tannins.
