This wine Bonarda DOC by Giorgi is cultivated in the area of Oltrepò Pavese, where the winery is very famous. It is composed by 100% Croatina variety, that produces around 90 quintals per hectare. The manual harvest is planned in the second decade of September. The soft pressing is immediately followed by automatic fermentation and maceration at a controlled temperature of 28°C. These processes last usually between 8 and 10 days. Then the complete malolactic fermentation. The aging concludes the production. It is developed in steel containers for six months at controlled temperature.
Features of Bonarda red wine
The organoleptic exam shows a ruby red colour full of purple reflection. The perfume is intense and elegant with hints of dark cherry, almond and fresh fruit. The taste is enchanting, dry and persistent.

Perfect with cold cuts, main dishes, braised meat and aged cheeses. It has to be served at 16°C in a wide wine glass that allows the diffusion of the perfumes.
