This traditional wine is sweet and sparkling at the same time and it belongs to the classification called “Sangue di Giuda DOC”. It is produced with 50% Croatina, 40% Barbera and a 10% composed by Uva Rara, Vespolina and Pinot Noir. Al the varieties above mentioned are cultivated in the traditional area of Oltrepò Pavese, where the vineyards give 80 quintals per hectare. The harvest it is managed manually, with an attentive selection of the bunches. After the arrival in the cellar, the fruits are submitted to soft pressing and elimination of stalks. During the fermentation, the must is left in contact with the skins for a short period in order to preserve the characteristics of the grapes. The wine is then poured in thermo-conditioned autoclaves made of steel where a light foam formation starts, maintaining although a good percentage of sugar. The aging is exclusively managed in steel.
Features of the red wine “Sangue di Giuda”
This wine shows a bright purple red colour with a creamy foam of medium persistence. Its perfume is intense, quite complex, classy and fragrant. The taste is pleasant, sweet, persistent and medium-structured.

It expresses its best with aged, spicy cheeses or sweets made with marmalade. It has to be served at 12°C in a small wine glass that allow the concentration of the scents.
