This rosé wine from the Sicilian Nicosia Winery comes from pure Nerello Mascalese grapes, grown in the company's vineyards located at an altitude of 650-750 m: here the earth is naturally composed of volcanic sand, an element that gives a characteristic mineral note to the wine. The harvest takes place in October: the grapes harvested in crates and carefully selected are then cold macerated in contact with the skins for a duration of 24 hours. The next phase of soft pressing then takes place and the must obtained ferment for 3 weeks. The final refinement phase includes a first stop in steel, followed by a stay of 3 months in the bottle before being marketed.
Characteristics of this Sicilian wine
The organoleptic examination shows a pale pink color and an olfactory spectrum that ranges from rose, currant, wild strawberries, pink grapefruit to dehydrated fruit, spices and pink pepper. On the palate it is characterized by a certain minerality and by the same fruity components that reach the nose.
