The Nerello Mascalese grapes are cultivated in a volcanic soil and they are perfect to produce the classic sparkling wine. The “Sosta Tre Santi” Etna DOC Brut needs 24 months of refinement on the yeasts in the bottle. The soils are sandy-volcanic, rich of minerals, located at 700-750 meters above the sea level. The cultivation method is the trellised with the guyot method. The manual picking takes place between September and October. The perlage is fine and persistent. The production method is the classic one with a soft pressing of the grapes and the fermentation in stainless steel tanks under temperature control for 3 weeks and a re-fermentation in bottle.
Characteristics of the Sosta Tre Santi Etna Brut Spumante DOC
It has a straw yellow color. The smell is complex and elegant with fruity and floral aromas together with bread crust and yeast. The taste is mineral and acid.

It is perfect as appetizer or with light starters and fish. The service temperature must be 6-8°C.
