This wine is made by Carricante and Cataratto grapes cultivated on volcanic soils, rich of minerals located at 700-750 meters above the sea level with important climatic excursion between night and day. The cultivation method is the trellised with the cordon spur pruning. The manual picking takes place in the second half of October. It follows the cold maceration for 24 hours before being softly pressed. The fermentation lasts for 48 hours with a static decantation and the fermentation lasts 20-25 days at 13-15°C. Finally, it takes place the refinement on fine lees in stainless steel tanks. There is also a little passage in acacia barrels and further 3-4 months in bottle.
Characteristics of the Etna Bianco DOC wine
It has a straw yellow color with bright gold reflections. The smell is complex and elegant with apple, grapefruit, and hawthorn and honey aromas. The taste is fresh, mineral with peculiar anise aftertaste.
Suggested pairings with this white NICOSIA wine
This white wine of Nicosia of Sicily is perfect with risotto of crustacean, grilled fish, fried fish and with courgette flower batter. It must be served at 12°C in a high and tapered wine glass.
