It is produced with local grapes such as 80% Nerello Mascalese and 20% Nerello Cappuccio cultivated on mineral volcanic soils. The cultivation soil is sandy-volcanic located at 700-750 meters above the sea level and the cultivation method is the trellised with the cordon spur pruning. The manual picking takes place in the second-third week of October. It follows a short maceration of 10-15 days before the fermentation at 24-26°C. It follows the aging period for the 50% in steel and the remaining 5-6 months in barrels and further 3-4 months in big barrels. Finally, the wine rests for 6 months in bottle.
Characteristics of the Etna Rosso DOC wine
It has ruby red color almost garnet with the aging. Th smell is elegant with red fruits aromas together with spices and licorice. The taste is warm, strong and persistent with a pleasant balsamic aroma.
