The Insolia is an ancient local wine very spread in Sicily characterized by an aromatic aroma. The Insolia vineyards are located on clay soils and the cultivation method is the Guyot. The manual picking takes place in September and it follows a cold maceration for 12 hours and a soft pressing. There is the fermentation for 48 hours with static decantation and another fermentation for 20-25 days at 15-18°C. Finally, it takes place the stainless steel aging on fine lees and 2-3 months in bottle.
Characteristics of the Insolia DOC Sicilia
It has a straw yellow color with golden and intense reflections. The smell is fresh and intense with exotic fruit aromas together with yellow flowers. The taste is fruity, full, sapid and structured.
Suggested pairings with this Sicilian wine
This wine is perfect with raw fish, sea food, white meats, grilled vegetables and cheeses. It must be served at 10°C in a tapered wine glass.
