Fruit of the wise and conscientious Sicilian tradition and the innovative capacity of Donnafugata technicians in the vinification of a rediscovered territory. That of the slopes of Etna, rich in minerality. The grapes used are those of Nerello Mascalese 100% pure. The production area is that of Eastern Sicily - north side of Etna. The vinification involves cold maceration in the press for 6-12 hours at 10°C at controlled temperature, followed by a fermentation in steel, also at controlled temperature. It follows the aging in tank for three months and at least two months in bottle before being marketed.
