Produced with 100% Minutolo grapes, this white wine from the Polvanera winery is born in the Marchesana vineyard in Gioia del Colle and the Macchia di Gatto vineyard in Casamassima, in the province of Bari. The harvest takes place through mechanical harvesting of the grapes in the second week of September: follows soft pressing of the grapes with a short maceration of 2/3 hours in the press and fermentation in steel for 20 days at a temperature of 13 ° C. Finally, the refinement takes place for 3 months in stainless steel and another 2 months in the bottle.
Characteristics of this Apulian wine
The organoleptic examination shows a straw yellow color with greenish reflections and an intense olfactory bouquet: banana, bergamot, peach and hawthorn. On the palate it is fresh, slightly savory and with a persistent finish.
Suggested food pairings with this Apulian white wine
