The Polvanera 21 of the Apulian Polvanera winery comes from 100% Primitivo grapes grown in the San Benedetto Vineyard, Acquaviva delle Fonti: here the soils are ferrous and with an underlying layer of limestone. The manual harvest takes place in the fourth week of September and the harvested bunches undergo maceration for 3 weeks; fermentation in stainless steel follows for 3 weeks at a temperature of 25°C. The procedure ends with the refinement of one year in stainless steel tanks with a final year in the bottle.
Characteristics of this Apulian wine
Organoleptic examination shows a purplish red color with ruby reflections; the nose is dominated by olfactory notes of red fruits such as blackberry, plum, cherry and carob but also floral tones of rose. Also consistent herbaceous and licorice notes.On the palate it is velvety and with present but pleasant tannins. Along the finish.

Perfect at the end of a meal: to be tried in particular with chocolate and desserts. Serve at a temperature of 14-16 °C.
