This Rosato IGT Puglia BIO from the Polvanera Apulian winery comes from a blend of grapes composed as follows: Aleatico 40%, Primitivo 30%, Aglianico 30%; the production area is the Marchesana Vineyard near Gioia del Colle where the vineyards grow on ferrous soils with layers of underlying rock. Following the mechanical harvesting of the grapes during the first week of September, the bunches undergo a soft pressing with a short maceration of 2/3 hours in the press; fermentation in stainless steel follows for 20 days at a temperature of 13°C with final aging of 3 months again in stainless steel and with a final 2 months in the bottle.
Characteristics of this Apulian wine
On organoleptic examination it shows a very intense cherry-pink colour; the olfactory bouquet revolves around small red fruits, especially wild strawberry, raspberry and cherry; floral hints of rose and oleander are also present. On the palate it is round and with a pleasant freshness; the finish is persistent and slightly balsamic.
Recommended pairings with this Apulian rosé wine
Try it with fish appetizers, sushi and sashimi. Also excellent with pizza. Serve at a temperature of 8-10°c.
