From the use of pure Barbera grapes from the vineyards of Agliano Terme, this red wine from the Piedmontese winery Agostino Pavia was born: The vineyards are the true protagonists of the process that leads to the birth of these Piedmontese wines, a true expression of the terroir to be found in the glass. For the production of this Barbera d'Asti Superiore, winemaking requires maceration with the pomace for approximately 13-15 days with frequent reassemblies and subsequent alcoholic fermentation at 28-30 °C, with malolactic fermentation by December. In January, it is racked and aged in Allier barriques for 11-12 months and finally assembled in steel for 3 months, with bottling the following May.
Features of this Barbera d'Asti Superiore
It features an intense ruby red color with delicate purplish hues and an eye-catching olfactory bouquet reminiscent of fruity and vanilla notes, as well as cocoa, coffee, caramel and toasted bread. On the palate there is a pleasant intense and persistent aftertaste.
Recommended pairings with this red wine from Piedmont
Particularly suitable with particularly structured red meat and game dishes: roasts, stews, braised meats, but also first courses with elaborate sauces and risottos. Serve at a temperature of 16°C.
