This exceptional Amarone Classico Bertani is a timeless wine and the expression of a unique style of the Bertani winery. The Amarone born by the Corvina and Rondinella grapes cultivated on the Novare estate hills in the core of the Valpolicella Classica in special vineyards dedicated to the wither grapes. The wine making process starts with the resting period of the grapes on the “aréle”, on bamboo trellises, according to the traditional method. The fermentation in cement and the aging in big barrels lasts 6 years and give structure to this wine and make it the most long-living wine. It is made by 80% Corvina Veronese grapes and 20% of Rondinella. The cultivation method is the cordon spur pruning with the Guyot method and the density is 5000 trees per hectares. The manual picking takes place in the second half of September after an accurate selection. The grapes must wither in one-layer trellises for about 120 days which gives an aromatic taste. At the half of January, the grapes are pressed and destemmed and they must macerate at 4-5°C for about 20 days. It follows a slow fermentation of 30 days in cement tanks at 18°C. Finally, it has to rest for 6 years in Slavonia oak barrels of 60 hl and then in bottle for further 12 months.
