AUDAX ZERO 3 is a Valdobbiadene Prosecco Superiore of Cantina Bortolomiol whose name is linked both to the audacity with which the founder Giuliano Bortolomiol first produced Prosecco di Valdobbiadene in Brut version and to the fact that the sugar content is close to zero. It is produced with 100% Glera grapes alone, grown in the vineyards located on the farm in the hills of Valdobbiadene. After the manual harvest, which takes place in the second half of September, the wine is vinified in white with soft pressing, followed by fermentation at controlled temperature through the use of selected yeasts, with fermentation at 2 months. Finally, it ends with aging with a duration of 1 to 3 months.
