From the vinification of 100% pure Sauvignon Blanc grapes. The origin is that of the Giovo and Meano area, Trentino. The vinification requires that the grapes are harvested manually in small containers towards the end of September. The grape is expected to be perfectly ripe to enhance the noblest aromas of Sauvignon blanc. The pressing takes place in the traditional way after a short cold maceration. The aging of the wine in the cellar is long, guaranteeing a natural and constant maturation. Already from the fermentation phase about 30% of this careful selection of Sauvignon blanc rests, matures and evolves into new French oak tonneaux. After about a year of waiting, the assembly between steel and oak is carried out, obtaining the cuvee which only after 3 months of further aging in the cellar begins its journey in the bottle. At least 6 months will pass before going out on the market.
Characteristics of this Sauvignon Doc
This wine has an intense straw yellow colour with golden hues. The perfume has a wide range of scents that outlines the profile to the nose moves on a progression of articulated notes, where citrus, officinal herbs and exotic fruit alternate in a dance of inviting aromas. The taste in the mouth is full-bodied, balanced, with a sip marked by a savory imprint; it closes with a finish characterized by a citrus aftertaste.
