Originating in Burgundy, the Pinot Noir grape variety is the founder of the Pinot family, from which Pinot Blanc, Pinot Grigio and Meunier later originated through bud mutations. The harvest for this dry red wine from Friuli Venezia Giulia is carried out by manually harvesting the bunches: the destemmed grapes are then macerated for 4-6 days to obtain a maximum concentration of colorants, tannins and aromatic components from the skins. Thus begins the alcoholic fermentation, then racking and pressing of the pigiato. With the addition of selected bacteria, malolactic fermentation is triggered, after which the final refinement phase in steel can begin for 3-4 months.
